The Certificate III in Commercial Cookery is the recognised qualification to become a qualified commercial cook. If you have a passion for cooking, tasting, and creativity, and a desire to turn this into a career, this course is for you.

Students will learn all aspects of the cooking trade, including:

  • How a commercial kitchen works
  • Basic nutrition
  • Cooking methods for different cuisines and dietary requirements
  • Kitchen safety
  • How to work as part of a multi-chef team

This course can be delivered on-campus or as an apprenticeship, both of which include 200 hours of practical workplace learning.

Before being accepted into the course applicants must:

  • Complete a Basic Key Skills Builder (BKSB) online test to ensure the required literacy & numeracy levels for the course are met.
  • Undertake a Pre-training Review by interview to ensure the course suits their needs and aspirations, and that they are likely to complete the course successfully.
  • Please apply through an Apprenticeship Network Provider with your employer to organise your traineeship contract prior to applying for this course.
  • Prospective VETDSS students are required to apply through your School's VET coordinator or Careers advisor.

Industry requirements

Students are advised industry requirements could include but are not limited to:

  • Practical assessment as per Training Package requirements will occur at work or within the GOTAFE simulated training environment.
  • Mandatory employment in the industry is required to complete this course for all apprentices/trainees
  • Commercial cookery work involves weekend and shift work, and early and late starts.
